6 eggs, lightly beaten
finely-grated zest of 1 lime
1.4l evaporated milk
650ml sweetened condensed milk
125ml white rum
2 tsp Angostura biters
freshly-grated nutmeg, to taste
Method:
Beat the eggs and lime zest in a bowl until light and creamy. Add the evaporated milk then sweeten to taste with the condensed milk. Add the bitters and rum then season to taste with the nutmeg. whisk to combine, strain into bottles and refrigerate over night. Serve over crushed ice.
