Great with curry dishes.
Ingredients 4 cup under-ripe mangoes-diced
1 cup dates-chopped
1 cup golden raisins
2 Scotch Bonnet or Habañero peppers-chopped
4 cups red wine vinegar
4 cups sugar
4 oz green ginger (unripe)-chopped
½ lb onions-chopped
2 cloves garlic-minced
1 teaspoon mustard seed
2 oz salt
Preparation Add fruits and hot peppers to vinegar and allow to sit for a day.
Then add sugar, ginger, garlic, onions and other seasonings.
Boil all the ingredients together gently until the chutney is thick and brown.
Note: You could substitute the mangoes with pears, peaches, or apples
to make different flavoured chutneys.
