1 Tablespoon Dark Brown Sugar
1 1/2 Teaspoons Salt
1 Teaspoon Cayenne
1 Teaspoon Ground Ancho Pepper
1 Teaspoon Ground Guajillo Pepper
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
1/2 Teaspoon Black Pepper
1/4 Teaspoon White Pepper
4 Medium Chicken Breast Halves
1 Tablespoon Olive Oil
1 Large Lemon Grass Stalk — slice diagonally
3 Tablespoons Fish Sauce
2 Cloves Garlic — sliced
1/2 Cup Chicken Stock
1 Tablespoon Fresh Parsley
Directions
combine seasoning mix in small bowl. slice each chicken breast crosswise and then slice diagonally in 2 inch strips. sprinkle seasoning mix over chicken. mash lemon grass. heat oil and lemon grass over high heat about 1 minute. add chicken stirring constantly. make sure lemon grass does not burn about 2 minutes. Stir in fish sauce, garlic and stock. Cook for 8 minutes. remove lemon grass from the sauce, stir in parsley. Serve hot with rice or noodles.
