5 ripe green avocadoes
1 tsp Green Seasoning
2 tsp sea salt
1/4 tsp white pepper
250ml double cream
1l chicken stock
80ml dry sherry
slices of fresh avocado, marinated in a little lime juice, to garnish
Method:
Combine the avocado, green seasoning, salt, white pepper and cream in a food processor and purée until smooth.
Meanwhile, heat the chicken stock in a large saucepan and bring just to a boil. Pour the avocado mixture into the hot stock then bring to a simmer and cook gently for 2 minutes before adding the sherry. Return to a simmer and cook for 2 minutes more. Adjust the seasonings to taste and serve ladled into soup bowls.
This soup can be served either hot or cold, garnished with lime-treated avocado slices.
