1 small red or green pepper, cored, seeded, and cut into thin rings
1/2 large red onion, thinly sliced and separated into rings
1/2regular size onion chopped thick.
3 or 4 firm Italian plum tomatoes chopped
1/3 cup olive oil
1/4 cup red wine or champagne vinegar
4 large cloves garlic, finely chopped
1/2 teaspoon freshly ground black pepper
Salt, if necessary, to taste
1/2 cup black olives
3 hard-boiled eggs, quartered
1 table spoon chopped Thyme
2 tablespoon chopped scallion
1 seeded small scotch bonnet pepper chopped
Direction.
Soak fish for a day or two dumping water every few hours to get all the salt out , boil cod fish till cooked just a few minutes (30) dump water then cool, flake fish with fingers then mix all liquid together, you can mix all other ingredients together with fish then pour the liquid over, decorate with eggs.
