4 Slices Bacon — Chopped
1 Medium Onion — Chopped
1 Clove Garlic — Chopped
1 Cup Rice
1 1/2 Cups Chicken Stock
1 Teaspoon Worcestershire Sauce
1/4 Teaspoon Cayenne
2 Teaspoons Salt
1 Can Tomatoes — Chopped
1 Pound Shrimp — Shelled
1 Tablespoon Parsley — Chopped
Directions
Saute bacon until fat renders. Saute onions until browned. Add rice and stir well. Add stock, worcestershire sauce, pepper, salt and tomatoes. Bring to a boil, then place in ovenproof dish. Bake in 350 degree oven for 30 minutes. Add shrimp, stir well and bake for 10 minutes more. Sprinkle with parsley and serve.
