1 1/2 Pounds Venison — Cubed
1 Medium Onion — Finely Chopped
3 Cloves Garlic — Finely Chopped
8 Small New Potatoes — Quartered
3 Stalks Celery — Diced
3 Medium Carrot — Chopped
2 Medium Bay Leaf
1 Cup Wild Mushrooms — Chopped
1/2 Teaspoon Sage
1/2 Teaspoon Parsley
Salt And Pepper — To Taste
1/4 Teaspoon Hot Sauce
2 Cups Beef Stock
8 Ounces Salsa
Directions
Heat oil and saute venison until light brown on all sides. Add garlic, onions and potatoes. Saute until onions are well browned. Add remaining ingredients and stir well. Cover and simmer for 30 minutes.
