3 Strips Bacon — Chopped
2 Pounds Venison — Chopped
1 Pound Pork — Chopped
6 Cloves Garlic — Chopped
2 Large Onion — Chopped
3 Medium Ancho Chili Peppers — Roased, Chopped
2 Medium Poblano Peppers — Roased, Chopped
4 Cups Black Beans — Cooked
6 Tablespoons Chili Powder
4 Tablespoons Cumin
1 Teaspoon Salt
3 Cups Tomatoe Sauce
2 Cups Beef Broth — Hot
1/2 Cup Epazote — Chopped
1 Teaspoon Oregano
1 Teaspoon Paprika
3 Tablespoons Cider Vinegar
Directions
add meats to pan; brown on all sides; add garlic and onions; saute 5 minutes; add chilis; saute 2 minutes; add beans, chili powder, cumin, salt, tomatoe sauce and broth; stir well; cover, simmer 1 hour
add herbs, paprika and vinegar; stir, simmer 15 minutes; serve with big loaf of crusty bread
