12 1/2 Cups Chicken Broth
1 1/4 Cups Wild Rice
5 Tablespoons Olive Oil
10 Ounces Turkey Kielbasa — Diced
2 Large Onions — Chopped
2 Large Carrots — Chopped
2 Pounds Corn
Salt And Pepper — To Taste
1 Cup Half And Half
Chives Or Parsley — Optional
Directions
Place 5 cups of broth over medium heat and bring to a simmer, add rice. Cook until liquid is absorbed about 20 minutes. Remove from heat. Heat oil and saute sausage until golden brown, add onions and carrots, saute until onions are golden brown. Add broth and simmer for 15 minutes. Add corn and simmer for 15 more minutes. Season with salt and pepper, add half and half, bring to a simmer. Remove from heat and serve garnished with parsley or chives.
