4 Tablespoons Butter
1 Large Onion — Chopped
2 Stalks Celery — Chopped
3 Medium Carrots — Chopped
4 Ounces Mushroom — Chopped
3 Tablespoons Flour
5 Cups Chicken Stock
3 Cups Wild Rice — Cooked
1 Teaspoon Thyme
3 Tablespoons Sherry
Salt And Pepper — To Taste
Directions
Saute onion, celery and carrots in butter for 5 minutes. Add mushrooms and saute for 3 minutes. Sprinkle in flour, stir well and saute for 1 minute. Add stock and thyme. Cover and simmer for 15 minutes. Add sherry and rice. Simmer for 1 minute. Season with salt and pepper and serve.
