1 Tablespoon Olive Oil
1 Pound Turkey Sausage — Sliced
5 Cloves Garlic — Chopped
3 Quarts Chicken Stock
3 Tablespoons Old Bay Seasoning
Salt — To Taste
2 Medium Bay Leaves
6 Medium Red Potatoes — Cubed
12 Ounces Corn
1 Can Tomatoes — Chopped
2 Pounds Crayfish Or Shrimp — In The Shell
1 Bunch Scallion — Chopped

Directions


Saute sausage in oil for 5 minutes. Add garlic and saute for 1 minute. Add broth, Old Bay seasoning, salt and bay leaves. Simmer for 10 minutes. Add potatoes and simmer for 15 minutes. Add corn, tomatoes, crayfish or shrimp and cook for 5 minutes. Ladle into bowls, sprinkle with scallions and serve.
