2 Medium Shallots — chopped
4 Cloves Garlic — chopped
1 Tablespoon Olive Oil
1 Bunch Arugula
2 Teaspoons Salt
1/2 Pound Small Pasta Shells — cooked
1/3 Cup Goat Cheese
1/3 Cup Parmesan Cheese
1/2 Teaspoon Black Pepper
2 Tablespoons Fresh Parsley — chopped
Directions
while pasta is still warm, toss with both cheeses so that they will melt. Saute shallots and garlic in oil. toss with pasta and remaining ingredients and serve.
