INGREDIENTS:
1 recipe of Mojo Criollo
4 medium size yucas peeled
2 tablespoons finely chopped
-fresh parsley, optional
-and cut into 1 to 1-1/2 inches
-thick
Directions:
Over medium heat in a big saucepan, add yuca and simmer covered, in the
salted water until they are tender for 25 to 30 minutes and drain.
Next transfer the yuca to a platter or a serving bowl, toss with garlic
sauce , sprinkle the parsley. Serve right away.
